Aloo Sabzi(Filling )for Masala Dosa

Masala aloo is a little differently made filling for masala dosa ( a south indian dish) . I tried to add a little of north indian touch to it by adding onion , tomatoes and the spices .

A quick recipe that can be a good lunchbox recipe or can be used as a filling in various other recipe like sandwiches, paratha, kulcha and many more.


Aloo Sabzi(Filling )for Masala DosaIngredients:

  1. Onion-2/diced
  2. Tomato-1/chopped
  3. Curry leaves-10-12
  4. Green chillies-2
  5. Corianderleaves-chopped for garnishing
  6. Cumin seeds-2tsp
  7. Black mustard seeds -2tsp
  8. Turmeric powder-2tsp
  9. Red chilly powder-1tsp
  10. Coriander powder-3tsp
  11. Salt to taste
  12. Oil-2tbspn
  13. Boiled potatoes-4


  1. Heat oil in a kadhai and add cumin seeds , black mustard seeds and let it splutter for half a minute.
  2. Then add the onions and saute for a while till it turns a little translucent.
  3. Then add curry leaves and tomatoes and cook for 4-5 mins till tomatoes turn soft.
  4. After that add the dry spices along with green chillies and mix for a minute or two.
  5. Meanwhile mash the boiled potatoes.
  6. Now to the masala mixture add the potatoes and mix for a 2-3 mins.
  7. Garnish with chopped coriander and cover for 2 mins on low flame.
  8. Masala aloo is all ready.Serve and enjoy.
  9. You can add a little of dry mango powder too if you want a little tangy touch to your filling .
  10.  You can use it as a filling for any sandwich ,paratha  or just eat it simply with a chapati too .
