Sponge rasgulla

Rasgulla is a syrupy dessert popular in the Indian subcontinent and regions with South Asian diaspora. It is made from ball shaped dumplings of chhena and semolina dough, cooked in light syrup made of sugar.


Ingredients :

  1. Milk  -1ltr
  2. Lemon -1
  3. Semolina OrArrowroot powder-11/2tsp 
  4. Sugar -1cup
  5. Yellow colour – pinch


  1. Boil milk and let it cool for sometime.
  2. As it cools for 3-4 mins add lemon juice to it , the moment it starts curdling stop putting lemon juice and let it curdlecompletely.
  3. Then strain the mixture and wash the cottage cheese left and tie it in a cloth tightly so that excess water drains out for aboutan hour or more.
  4. Now keep punching and mixing the cheese for 4-5 mins until it comes out in dough form.
  5. Add arrowroot powder and little yellow colour and the mix again and form a dough.
  6. Meanwhile add sugar in 3 cups of water and let it boil 
  7. Divide dough in in equal parts and make small round balls
  8. As it starts boiling  add the balls to it and cover with lid for around 20 mins, keep checking in between and turn sides after 10 mins.
  9. Now take out in a bowl and as it cools put in refrigerator and serve cold .
