Basic Sponge Cake (For Pineapple  Cake and pastry)

Sponge cake is a cake based on flour, sugar, butter and eggs, and is sometimes leavened with baking powder. It has a firm, yet well aerated structure, similar to a sea sponge.



  1. All purpose flour-1 1/2cup
  2. Caster sugar-1cup
  3. Butter-1/2cup
  4. Milk-1/4cup
  5. Eggs-4
  6. Baking powder-1tsp
  7. Salt-1/4tsp
  8. Vanilla essence-1tsp

Recipe for sponge cake:

  1. In a bowl ,add 4 eggs and beat with sugar until fluffy with a hand blender or whisk.
  2. Add vanilla essence in between while blending.
  3. Now Sieve flour,baking powder and salt together and add to the mix .
  4. Start folding the mixture clockwise through cut and fold method.
  5. Now dissolve butter in hot milk and add to the mixture and fold in to a pouring consistency 
  6. Meanwhile grease a pan for baking like a loaf pan or square cake baking pan.
  7. Pour the batter to the pan leaving space enough to let the cake rise .
  8. Dab alittle to let out any air bubble trapped
  9. Bake at 180C for around 40-50 min or till a toothpick inserted comes out clean.
  10. Let it cool on a cooling rack for 10-15 mins 
  11. Take the cake out of pan gently .
  12. Now if you baked in a square mould you use it as a Sponge cake or pineapple cake or cut into pieces to form pastry sheets for pineapple pastry  
  13. If a loaf pan is used divide it into two sheets horizontally and use frosting to serve it as pineapple pastry if you wish to.
