Chocolate fudge

A yummilicious recipe loved by children and everyone , can be served as a dessert .
It is a delicious mix of cocoa with milk powder and is extremely tasty to dig in. It can also be made using condensed milk, the choice is all yours.

Ingredients

  1. Unsalted Butter-3tsp
  2. Sugar-1/2cup
  3. Coco powder-1/4 cup
  4. Milk powder-1cup
  5. Chopped nuts of your choice
  6. Milk -if needed

Recipe 

  1. Heat butter via double boiler method(putting a bowl over another pan or bowl with boiling water on a gas stove)
  2. As the butter melts add sugar .
  3. Now into it ,add the cocoa powder and mix until all lumps dissolve 
  4. Add a little milk here if the mixture is too thick but be cautious while adding as adding more will not give the perfect fudge consistency.
  5. Now put the flame to low and add milk powder and mix well to make a smooth paste consistency ,add half of the chopped nuts and switch off the flame.
  6. Now grease a baking paper with butter and pour the mixture on it and give a chocolate shape(rectangular) andgarnish with left over nuts.
  7. Cover the baking paper from sides.
  8. Refrigerate for 4-6 hours and your yummy choco fudge is all ready!!

Crispy Dosa

A southindian recipe which is very famous and delicious . It is made with a mixture of rice and dal and can be made easily at home.

The making of Dosa calls for a little practice but anyone can do it easily after trying a fewtimes. So Dont dishearten if your dosa turns into a map shape ,try out a few times and you ll make it easily am sure 👍🏻

Crispy DosaFor the batter (Ingredients):

  1. Rice-3cup
  2. White urad dal-1cup
  3. Fenugreek seeds-11/2tsp

Recipe for batter:

  1. Soak rice ,dal and methi dana for around 12-14 hours/Overnight in a pan or you can soak them separately in different pans too.
  2. Then make a smooth paste of all the things and add together .
  3. Add a little water if needed to make it into a pouring like consistency but not runny.
  4. Be cautious while adding water else it will turn very runny and batter will be ruined.
  5. So add very little water at a time and mix and see the consistency before adding more .
  6. Keep it for another 4-6 hours or more to ferment a little more before making Dosa.

For the Dosa(Ingredients):

  1. Dosa batter-
  2. Oil-2tbsp
  3. Water -1cup

Recipe for Dosa:

  1. As the pan heats up for making dosa sprinkle a little water and put the flame to low.
  2. Now take 1heaped spookn of batter in cooking spoon and pour it in the center.
  3. Then move the batter in circular motion spreading it outward starting from the center into a round shape.
  4. Let it cook from the lower surface now until brown patches appear .
  5. As it cooks turn the side and cook for half a minute.
  6. Then flip again to add more crispiness to the bottom surface and serve immediately after filling aloo stuffing into it .
  7. Serve with coconut or peanut chutney along with sambhar and enjoy a South indian dosa platter right at home.

Aloo ki sabzi / potato curry

Aloo ki sabzi is the most quick and popular recipe made in Indian Homes .There are many varieties and preparation of aloo sabzi. Most notable ones are with gravy and without gravy.
This recipe of Aloo ki Subzi uses tomato and spices to give it a little spicy tangy touch . It tastes amazing when eaten with any kind of poori .

Aloo ki sabzi / potato curryIngredients

  1. Boiled potato-3-4
  2. Oil -2tbsb
  3. Asofaetida-1/4 tsp
  4. Cumin seeds-1 tsp
  5. Onion -1 /diced
  6. Tomato -2 /puree
  7. Ginger garlic paste-2tsp
  8. Turmeric powder-2tsp
  9. Red chilly powder-2tsp
  10. Coriander powder-3tsp
  11. Dry mango powder-1tsp
  12. Garam masala-1/2tsp
  13. Whole green chilly -2
  14. Chopped coriander for garnishing.

Recipe:

  1. Heat oil in kadhai /wok .Add cumin seeds as it heats up and then add onions as cumin seedd start spluttering.
  2. Fry onions until golden brown .Add asofaetida along with ginger garlic paste.
  3. After a minute add tomato puree along with all dry spices accept garam masala.
  4. Cook for 4-5 mins until oil leaves the sides of kadhai.
  5. Then add boiled potato after breaking them unevenly with hands
  6. Add a little water and let it cook for 4-5 mins.
  7. Cook till gravy thickens and then garnish with chopped coriander and a little garam masala .
  8. Cover for 2 mins and serve hot .

Palak poori

Palak poori is made by mixing wheat flour with pureed spinach and other spices. … Spinach puri served with potato curry makes a good lunchbox recipe.
It is very yummy and easy recipe and specially comes very handy for children as this way they atleast eat up green leafy vegetable .

Palak pooriIngredients:

  1. Wheat flour-21/2cup
  2. Salt- to taste
  3. Cumin seeds/carom seeds-1tsp
  4. Oil-1tbsp for dough and for frying
  5. Spinach-250gms /blended to a paste
  6. Asofaetida-1/4 tsp

Recipe:

  1. Place flour in a bowl or any Deep vessel. Add salt ,cumin and carom seeds .
  2. Now add 1 tbsp of oil .
  3. Then with the help of water knead into a soft dough (a little firm than chapati dough)
  4. Now Let it rest for 10-15 mins.
  5. After 15 mins ,divide the dough into equal small balls.
  6. Roll into small round pooris.
  7. Heat oil enough for deep frying pooris.
  8. Deep fry pooris as the oil becomes very hot .
  9. Press a little as u add the poori to kadhai or wok so that it inflates nicely.
  10. Serve Hot and enjoy.

Bhuna Chicken

Bhuna chicken made with loads of onion is a perfect semi gravy kind of chicken dish . It tastes amazing , and is made with very less ingredients and is a very quick and easy recipe.

Bhuna Chickenimg_0677Ingredients:

  1. Onion-2large/Diced
  2. Tomato- 1 medium /roughly chopped
  3. Ginger garlic paste-2tsp
  4. Whole Red chillies-2-3
  5. Turmeric powder-1tsp
  6. Red chilly powder-2tsp
  7. Coriander powder-3tsp
  8. Salt to taste
  9. Oil-2tbspn
  10. Cinnamon stick-1-2
  11. Coriander leaves for garnishing
  12. Garam masala -1/2 tsp

Recipe:

  1. Heat oil in a kadhai /wok and after that add cinnamon stick and onions
  2. Fry until onion turns Golden brown in colour and then add the ginger garlic paste.
  3. Cook for a minute and then add the chopped tomatoes and cook until tomatoes turn soft and mushy and oil leaves the sides of kadhai.
  4.  As the tomatoes cook ,add whole red chilly and dry spices and mix well .
  5. After around 2-3 mins, add chicken pieces and cook for 4-5 mins.
  6. Add a little water and cover the lid till chicken pieces cook completely.
  7. Add chopped coriander leaves anda little garam masala and Serve.
  8. Bhuna chicken is now ready to eat!!!

Garlic Naan

This aromatic naan bread is the perfect start to your Indian-inspired feast. I made it on tawa and it came exceptionally good .Give it a try !!!

Ingredients:

  1.  All-purpose flour (plain flour, Maida)-2cups
  2.  Baking soda- half tsp
  3. salt- half tsp
  4. sugar -half tsp
  5. 1/4 cup yogurt at room temperature
  6. 1-2 tablespoons oil
  7.  Luke warm water
  8. 1/4 cup all-purpose for rolling
  9. Garlic powder-1 tsp or Garlic pods chopped finely
  10. 1 tablespoon soft butter or ghee.
  11. About 1 tablespoon of chopped coriander leaves

Recipe:

  1. Mix all the dry ingredients together and oil and yoghurt .knead into a soft dough.
  2.  Apply light oil to the dough and cover. Let the dough sit for about 2 hours in warm place.
  3. Divide the dough in parts.
  4. Take one dumpling and lightly roll into the flour lightly and rub off the excess.
  5. Then Roll the naan one at a time on a lightly floured surface in a shape and size of own choice.
  6. Place few coriander leaves on naan and press gently with rolling pin.
  7.  Sprinkle the water lightly on one side of the naan.
  8. Heat the tawa on medium heat and put water side naan over tawa, once the naan start bubbling and dough start drying
  9. Take the uncooked side of naan and place it over flames keeping about 2 inch away from the flames to cook the naan from top.
  10. Once naan browned to your satisfaction, remove, and spread the butter over. Place in a on a serving tray and your Garlic Naan is ready!
